Easy Oven Roasted Brussel Sprouts with Pancetta

Back at it again! These are so easy and so delicious!

1lb. brussel sprouts halved and trimmed
1 tbl. olive oil
8 oz. diced pancetta
1 small shallot sliced thinly
smoked sea salt
fresh ground pepper

Preheat the oven to 400 degrees. Toss all ingredients in a large bowl then place on a baking sheet and roast for approximately 40 to 45 minutes until sprouts are browned and pancetta is cooked through. Enjoy!
