Pasta with Chicken, Sun-Dried Tomatoes, Basil, Pine Nuts in a Creamy Gorgonzola Sauce
2 tbls. Olive oil
1/ 4 cup sun-dried tomatoes chopped finely
2 skinless boneless chicken breast halves diced
½ pound bowtie pasta
4 garlic cloves, minced
1/4 cup chopped fresh basil
1/2 cup crumbled Gorgonzola cheese
1/4 cup pine nuts, toasted
2 tbl. Heavy whipping cream
Salt and pepper
Cook pasta according to package, drain and reserve ½ cup cooking liquid.
Sauté chicken in the olive oil, add garlic, salt and pepper to taste, cook thoroughly on medium to medium high heat then lower to simmer, add sundried tomatoes, gorgonzola, heavy whipping cream and stir until melted thoroughly. Toss the basil and toasted pine nuts in and more salt and pepper if needed.
