Asparagus, Artichoke, Feta & Spring Onion Quiche

Spring! Asparagus! Lately I have been wanting to make a quiche but thought that our oven may not cooperate. I tried anyway. My stepmom, Nancy, emailed me a recipe a few days ago and I had to adjust it a bit since ingredients are limited in Bonaire.

1 pre-made refrigerated pie crust
3 eggs
1/4 cup greek yogurt
1/4 cup skim milk
1 tsp.white pepper
salt (to taste)
10-12 4 inch pieces of asparagus
4 tbs. sliced green onions, white and green parts!
1/4 cup chopped artichoke hearts
3 tbs. crumbled feta

Pre-heat oven to 400 degrees. Mold pie-crust into a pie pan or quiche pan, pushing up the sides to cover the whole pan. Bake for about 10-15 minutes until lightly golden brown. Remove from oven. Meanwhile saute asparagus with a dash of olive oil and sea salt on medium-high for about 5 minutes, constantly tossing the stalks. Remove from heat and set aside. Combine eggs, yogurt, milk, salt and pepper in a small bowl. Place asparagus into pie crust and pour the egg mixture in. Scatter the feta, green onions and artichokes into the pan. Reduce oven temperature to 350 and bake the quiche for about 25-30 minutes until cooked through.
